Create endless variations with Vegter’s Rolls
Cassata-filled Rolls
A delicious variation of the classic whipped cream-filled Rolls, with candied fruits and dark chocolate. Ricotta, a soft Italian cheese, is used instead of cream.
Fills about 6 Rolls:
- 6 Vegter’s Rolls
- 50 grams ricotta
- 110 grams white caster sugar
- 8 grams vanilla sugar
- 40 grams chopped candied fruits
- 40 grams chopped candied orange peels
- 40 grams chopped dark chocolate
- 40 grams grated dark chocolate
- Mix the ricotta, caster sugar and vanilla sugar in a bowl.
- Mix in the candied fruits, orange peels and the chopped chocolate.
- Scoop the ricotta mixture into a piping bag with a smooth nozzle and fill the Rolls.
- Garnish them with the grated chocolate.
Lemon buttercream-filled Rolls
A lovely union between pleasant sweetness and surprising freshness. This appetising treat will channel sunny places and tropical paradises.
Fills about 10 Rolls:
- 10 Vegter’s Rolls
- 250 grams butter (room temperature)
- 4 tablespoons powdered sugar
- 2 (biological) lemons (peels and juice)
- Clean the lemons thoroughly and grate the skin. Non-biological lemons have a wax layer which has not got a pleasant taste. You can use a zester to remove some parts of the skin and grate the rest of the lemons.
- Juice the lemons.
- Whisk the butter with the powdered sugar and two tablespoons into a light mixture, this should take about five minutes.
- Mix in the lemon peels. You can keep back one tablespoon to garnish with later.
- Put the butter mixture in a piping bag with a jagged nozzle and fill the Rolls.
- Garnish with the remaining lemon peels.
- Refrigerate briefly until it is hardenend slightly.
Strawberry fool
A lovely and rich dessert, perfect for a summery day. A simple fool can be put together by folding some mashed fruit into whipped cream.
- 250 grams strawberries
- 125 millilitres cream
- 225 grams full-fat quark
- 2 teaspoons lime juice
- 2 tablespoons white caster sugar
- 4 Vegter’s Rolls
- Wash and dry the strawberries. Remove their crowns. You can keep back some bigger strawberries to garnish with later.
- Mash the strawberries in a bowl.
- Whip the cream semi-stiff (when you remove the whisk, a lobbed peak should form).
- Mix the quark, lime juice and Sugar into a light mass.
- Carefully scoop the strawberries into the quark mixture.
- Do the same with the cream.
- Distribute the mixture into four hight bowls or serving glasses.
- Cut the remaining strawberries into thin slices.
- Garnish the strawberry fool with the strawberry slices and the Rolls.
